In 2007 the Wantsumeaux Gumbeaux cooking team competed in its very first gumbo cook-off, winning the first time out. Since then we have competed all over Texas and Louisiana, winning or placing each and every time, including the World Championship Gumbo cook-off in New Iberia, Louisiana.
A few years ago, a friend with celiac disease asked if we could come up with a gluten-free gumbo for her, and after months of trials (and more than a few errors), the end result was a dry roux mix that is not only gluten-free but delicious and authentic tasting.
